Eating Multi-grains
Eating Multi-grains is a very healthy way of eating right because they provide lots of protein, vitamins, fibers and minerals. It can help to keep your body from absorbing too much glucose and fat, keep the blood sugar low and strengthen your body immune system to get away with diseases.
The name of the multi-grains:
1) Buckwheat, 2) Black Japonica, 3) Millet, 4) Rye, 5) Quinoa, 6) Amaranth, 7) Oat(Cracked), (有殼,不是一般泡熱水或是水煮easy-cooked的那一種) 8) Red Rice or Wild Rice 9) 紅薏仁(有殼),or 糙薏仁(有殼),or薏仁
#1 ~ #7 and Wild rice can be found at WholeFood Market, Red rice and #9 can be found at 大生堂or 德成行。
Cooking method A:
1) Mixed them with 1:1 ration to get 3 or 4 cups or even more as wished and put them in a big bowl.
2) Fill the bowl with drinking water and placed for at least 8 hours (No need to wash them but if can if you like)
3) Cover the bowl with a big plate and drain the water
4) Put them into a rice cooker and pour equal cups of water (3 cups of water if there are 3 cups of multi-grains)
5) Stir the multi-grains to be evenly placed and then Cooked them
6) After the rice cooker power off, placed them for 20~30 minutes then they are ready for serving
7) The extra or left multi-grains after meal can be stored into a container and kept in the refrigerator for next meal.
If you like the multi-grains to be more softer, then cooking method-B is recommended.
Cooking method B: Buy a Japanese-made wide-open mouth Vacuum Bottle (1.7 litter)
a) Mix these seven grains with 1:1 ratio to get two and half cups(rice cup), no need to wash these grains, they are clean
b) Fry and stir these multi-grains in a stainless pan with medium fire for 7~10 minutes(without water), be careful not to burn them
c) Boil water in a tea pot at the same time
d) Place the fried multi-grains into a vacuum bottle(about 1.7 litter)
e) Pour boiled water into the vacuum bottle and have water filled up to 90% of the bottle (to leave some capacity for multi-grains expansion).
f) Seal the vacuum bottle with its cap and place it for at least 3-4 hours or even longer
g) They are ready to be served as a replacement of white rice. It will be difficult to get the multi-grains out of the bottle if it has a small open mouth.
h) The extra or left multi-grains after meal can be stored into a container and kept in the refrigerator for next meal.
